Prince of Wales

Ingredients

1.5 oz.

Rye Whiskey

1 Barspoon

Maraschino Liqueur

1

Pineapple Chunk (or .5 oz. Pineapple Juice)

.25 oz.

2 Dashes

Angostura Bitters

Chilled Champagne (Sparkling Wine)

Directions

  1. Combine the Whiskey, Liqueur, Pineapple, Simple Syrup and Bitters in a Cocktail Shaker with Ice

  2. Shake for 15 Seconds

  3. Double Strain into a Cocktail Glass or Coupe

  4. Top with Champagne

  5. Garnish with a Lemon Slice



The Price of Wales is a riff of the Improved Whiskey Cocktail. It was invented by King Edward VII in the early 1900's. At the time, he was just the "Prince of Wales," thus the name of the drink.

Old Cuban

Ingredients

1.5 oz.

Dark Rum

.75 oz.

Lime Juice

1 oz.

Mint Leaves

2 Dashes

Angostura Bitters

Chilled Champagne (Sparkling Wine)

Directions

  1. Combine the Rum, Lime Juice, Mint, Simple Syrup and Bitters in a Cocktail Shaker with Ice

  2. Shake for 15 Seconds

  3. Double Strain into a Champagne Coupe

  4. Top with Champagne

  5. Garnish with a Mint Sprig



The Old Cuban was invented in 2001 by Legendary Bartender, Audrey Saunders, while she worked at a restaurant named Beacon in New York City. This is an Official IBA Cocktail.

Margarita Negra

Ingredients

1.5 oz.

Tequila

1.5 oz.

Coffee Liqueur

1.5 oz.

Lime Juice

.75 oz.

Agave Nectar (or Agave Syrup)

Directions

  1. Salt the Rim of a Rocks Glass

  2. Combine the Ingredients into a Cocktail Shaker with Ice

  3. Shake for 15 Seconds

  4. Double Strain into the Rocks Glass over Ice

  5. Garnish with a Lime Slice



The Margarita Negra is a Coffee version of a Margarita, or more like a Tommy's Margarita, on account of the Agave Nectar.
